It’s officially the season of; me. Now that both kids are gone for 8 hours I’m filling up my day with work and rearranging the house to get some projects completed.
I’ve spent the summer going over my schedule to get everything done within a time frame that when the kids come back home, I can be in full mom mode. The only thing I didn’t plan? Eating.
I grab a bottle of water after they get on the bus and take a trip around the block, come back and do a block of work and some housework. Then a timer usually goes off to remind me to get lunch.

When I baked the Udi’s Sweet Potato Crust Chicken BBQ Pizza, I was so excited to try it for it being gluten free and having a crust made of sweet potatoes. Living in Western New York, I was practically born with a slice of pizza in my hand. I love a good pizza and Udi’s has a wide variety to choose from so lunch flavor can switch up.
The barbeque sauce crisped up nicely on top of the pizza and the tangy flavor complimented the sweet potato crust wonderfully. All toppings were proportioned respectfully and each slice had a perfect combination. I already found out that one of my local grocer’s carries them and they are on the list to stock up on.
Birds Eye Veggie Made™ Garlic Chicken
This is a brand that I have been using for lunch for quite a while. I’ll pop it in the microwave and then do a few dishes and enjoy. The crisp broccoli, love my vegetables, and grilled white meat chicken tasted like I was having a classic Italian meal.
Birds Eye Veggie Made™ Mac & Cheese
Mac & cheese with pasta made from 100% vegetables? I never thought that would have been a combination I would go for but it is now. There was so much tasty cheddar cheese on top of the veggies, I think it will be a permanent replacement for mac & cheese now.
Gardein Classic Meatless Meatballs
I have had meatballs in many forms but I’ve never tried any meatless meatballs. These can be made in 8 minutes which is perfect time to warm up some sauce and a little bit of pasta. These include Non-GMO soy and for being the first replacement I’ve ever had to a meat-based food product, I’m greatly impressed!
Now I have four new lunch options that I can schedule into my calendar easily and get on with my routine.
