Fast and simple caprese sandwich

  • Pesto sauce
  • Fresh Mozzarella
  • Large Tomatoes
  • Salt/pepper
  • Olive Oil
  • Basil leave
  • Good quality bread (sourdough, sprouted grain...)
  1. You can slightly toast the bread or put it on the grill for a couple of mins.
  2. Slice the cheese and tomatoes, and season each one with some salt and pepper.
  3. Spread pesto on bread
  4. Layer the bread with the cheese then the tomatoes.
  5. Thinly slice the basil leaves and sprinkle on top.
  6. Last, but not least, drizzle some of your best evoo over each bread.
