Easy and Cheesy Chicken Enchiladas
It’s already a few weeks into the New Year and I’m trying to pay attention to the goal I set. Trying to take better care of myself, and I don’t just mean health but my happiness and being more generous. Making delicious dinners with Progresso® Light is a great way for me keep dinners simple and along with our new balanced eating.
Helping my son’s school win a grant last year was a good achievement for me. It felt so amazing to give back to them after everything they have done, and I continue to do so while collecting Box Tops For Education.
Warm Dinners
We usually have a running list of products that have this fantastic way to give back to our schools. Now that the blustering cold has hit our region, I like to make warm and wholesome dinners from Progresso® Light. Instead of just making soup, I make it the main ingredient with dinner.
At my local Walmart in the soup section, I have a variety of Progresso® Light products to choose from. In the pantry there is always a vegetable based soup, like Homestyle Vegetable and Rice, to bring out during lunch time when I’m usually at the peak of working.
My favorite dish to make is Easy and Cheesy Chicken Enchiladas. With just a few simple steps and less than 30 minutes, I have a scrumptious dinner to serve and another box top clipped in the bag.

- 2 cans Progresso® Light Chicken & Cheese Enchilada
- 4 tortillas
- 1 cup enchilada sauce
- shredded cheese
- Strain the soup and save the liquid in a bowl set aside
- Place soup ingredients in tortillas and roll up put in glass baking dish
- In bowl with ⅔ c. soup reserve add enchilada sauce and stir until smooth
- Preheat oven to 350
- Pour over enchiladas and top with cheese
- Place in oven for 20 minutes or until cheese is melted

I have just recently discovered gluten free tortillas that doesn’t have any preservatives. I’m over the moon. It’s so nice that I don’t have to make them from scratch every time we need tortillas.

This is one of my favorite dishes to make! Using that soup seems to cut out a few steps that I usually take, so it might be a lot easier!
That is an awesome way to use Progresso Light soups. I love their light soup line and they have such a great variety. I also love Mexican food, so this would be a hit for me for lunch any time.

I just made these, I did make a couple of changes…. added 2Tbsp. of mild chunky salsa & 6oz of chopped rotisserie chicken breast to the filling, I needed to stretch it to make 8 small enchiladas. My hubby can not eat anything spicy.. which these are not …. he just loved them, so these are a keeper for us.
