Coffee Nut Bars: Coffee M&Ms Dessert
The kids are heading to school this week and all mom has is her coffee, and a handful of cats to bug me all day. As soon as school was getting close I was telling myself that I need to start baking more. Having all day to myself I can put something in the oven and clean and be right on schedule. We’ll see how great that goes, probably not as great as these Coffee Nut Bars.
I don’t know what M&M you voted for when the new flavors were out but I was rooting for coffee nut the whole way. I mean seriously what could make anyone happier than combining chocolate and coffee?! Somehow making it be able to count for a meal would be wonderful but I’ll just be happy with the fact that the flavor won!
One of the easiest ways that I make desserts stretch is by adding candy that we already have on hand. It saves you money instead of buying a bag of baking chips and helps to share some of the candy without a fight. Unless you don’t want to share then you better find a good place to hide them.
These bars are the perfect bite size for little hands and you can stack a few at a time your palm if you’re an adult. Just for reference if you needed to know, promise. This is a better alternative that I would like Korey to choose instead of wanting to take sips of my coffee.
One day he just came up to me and asked for a sip. I take 2 creams and 2 sugars in my coffee, unlike his dad who takes 2 creams and 4 sugars (YUCK). He said that it tasted good, and wanted nothing to do with dad’s thank goodness. Now he has this habit of asking me if it’s too cold, too hot or just right. Thinking about it he has some of those bad habits that Goldilocks has like sitting in all of our spots.
- ½ cup white sugar
- ½ cup butter, softened
- ⅓ packed brown sugar
- 1 teaspoon vanilla
- 1 egg
- 1-1/2 cups flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- Coffee & Nut Chocolate m&m candies
- Preheat oven to 350. Grease a square baking pan.
- Mix sugars, butter and vanilla and egg in a large bowl and beat well. Stir in four, baking soda and salt. Dough will be dry.
- Press dough into your prepared pan and bake 15-20 minutes or until golden brown.
- Remove from oven and press coffee & nut m&m candies into the bar, about 1-1/2" apart. Let cool before cutting.
- Makes 40-48 bars.
