Broccoli and Apple Salad Recipe
Are you looking for a healthy meal for your family? This broccoli and apple salad recipe is the perfect dish for lunch, or even as a side dish with your dinner.
I have always been a big fan of fresh broccoli, I can eat it raw or steamed either is great to me. When I started turning my salads into healthier dishes, I first started adding more broccoli to give myself a crunch familiar with croutons. Swapping out croutons for broccoli was an easy switch for me.
Even though you can get nutrients from iceberg lettuce, like iron and b6, it’s also loaded with sugars. With broccoli you get Vitamin E, Calcium and Iron, just to name a few. Looking into the nutrients that my food offers me allows me to see why it’s so easy to make a switch from lettuce based salads to vegetable based salads.
Here is the delicious recipe for this salad which would be great any time of the day.
- Two heads of broccoli, cut into small pieces (about 3 cups)
- 1 large carrot, grated
- ½ apple, chopped
- ¼ cup of pumpkin seeds
- ¼ cup dried cranberries
- ½ cup mayonnaise
- 2 Tbsp lemon juice
- salt/pepper to taste
- Mix everything in a large bowl until well combined. I totally use my hands for this!
- Let sit in the fridge for 1 hour before serving.
- You can also adjust the amount of mayo in this recipe. My family doesn't like it with too much mayo.
- You can add onions as well.
Now you have a delicious salad recipe that makes a more nutrient punch. If your kids love broccoli but don’t like salad this is a great way to get them to make their own salad and get vegetables in them with a sweet taste from the apples.
