Blueberry Tapioca Pie
It’s the second part in the series Summer of Pudding from Kozy Shack. Tomorrow, July 15th is not only MY BIRTHDAY (Yes I’ll be 28) but also National Tapioca Pudding Day! Celebrate with a delicious bowl of Kozy Shack Tapioca pudding, you can use my recipe to make a lovely Blueberry Tapioca Pie.
Summer of Pudding: Tapioca Pie
It almost came to me right away on how I would celebrate National Tapioca Day. I like making deconstructed pies now, something simple by just using graham crackers, butter or in this case hot fudge and a simple topping of blueberries. I know most of us will grab the tub of Kozy Shack Tapioca pudding and eat it straight out of the fridge.
I’m hoping this recipe is simple enough to allow you to savor some of it in a Tapioca Pie.
- 1 full size graham cracker slice crumbled
- Hot Fudge
- Tapioca Pudding
- Handful of fresh or frozen blueberries
- Crumble graham crackers into bottom of serving dish
- Top with hot fudge giving it a layer
- Pile on heaping spoonfuls of Tapioca Pudding
- Add blueberries to top
- Serve and enjoy
