Berry Overloaded Oatmeal Recipe
I think that breakfast needs to pack a punch. For me that usually means fruit, lots of it. Trying to get my children to eat better means that I need to set a better example. And as much as I enjoy my pretzel bagel and vanilla dip from Tim Hortons, I know that I need better too.
Taking the little extra time to take care of myself really brightens my mood the rest of the day. And running after Kyler, and making sure Korey has his homework done is my daily routine between working and cleaning.
- 1 c. rolled oats prepared
- ½ c. strawberries
- ¼ c. blackberries
- Cut strawberries into bite size pieces, leave blackberries whole
- With oats still hot add fruit on top
- Stir and mash blackberries to give extra taste
I love smashing up the blackberries to have the juices come out, it really amps up the flavor of the oatmeal. Switching to steel cut oats has been a change for my palette. It takes awhile to make, but the payoff is really worth the time and effort to make. Gives a great excuse to wake up earlier!
