Ingredients

- 2 tablespoons apple cider vinegar

- 1.5 cups of petite tortellini
- 1.5 cups of petite tortellini
- ⅔ cup peas
- ⅔ cup peas
- ⅔ cup corn
- ⅔ cup corn
- salt, pepper and thyme to season
Instructions
- Start by washing all of the vegetables then removing the breast from the chicken along with any other meat you would like to reserve for the finished soup. Cover and place that in the refrigerator until you’re ready for it.
- Place the chicken remains in a large pot and cover with cold water, add the apple cider vinegar and let rest for about 20 minutes (this will help the bones release the vital nutrients they hold inside.
- After the wait time add the onion only rough chopped or in half is perfectly alright along with the smashed garlic cloves, carrots cut into large pieces and celery stocks cut into sticks.
- Heat to a boil, then cover and reduce the heat to a simmer. Should anything foamy float to the top, skim away. Simmer for at least 6 hours, the longer the better, before scooping out the carrot, garlic, onion and leftover chicken, save off to the side.
- Strain out and discard the rest of the bones, a fine mesh strainer works well for this.
- Boil the tortellini in the liquid stock that remains until just cooked, then add back in the vegetables and chicken breast saved at the start.
- Turn off the heat and let sit for about 10 minutes all together before serving.
This chicken noodle soup is unlike any other because of the tortellini pasta. I find it to be much more filling pasta and the kids adore the fun noodles. The perfect warm winter dish for lunch or dinner!

I always read and/or see the best recipes in the middle of the night when I’m starving. This is definitely going at the top of the recipes I’m going to try as soon as possible. It’s a soup made for winter and I love the tortellini twist I’m not a great cook by any means so wush me luck.
